Our pita wrap combines lean grilled hen with loads of recent veggies. This recipe is pretty easy: Grill the hen, make the essential yogurt sauce, assemble and luxuriate in.

Mediterranean Hen Pita

For the grilled hen
- 2 tbsp olive oil
- 1/2 medium lemon, juiced
- 1 clove garlic, minced
- 3/4 tsp dried oregano
- 1/2 tsp dried thyme
- 1/8 tsp salt
- 1/8 tsp freshly floor black pepper
- 1 lb (455 g) boneless, skinless hen breasts
For the yogurt sauce
- 1/2 cup 0% plain Greek yogurt
- 1/4 English cucumber, grated, water squeezed out
- 1 small garlic clove, minced
For the toppings
- 4 Greek pita flat breads
- 2 Roma tomatoes, sliced
- 3/4 English cucumber, thinly sliced
- 1/2 medium pink onion, minced, if desired
Instructions
In a bowl, whisk collectively the olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Add the hen breasts and toss to coat evenly. Cowl and marinate for not less than 1 hour, or as much as 8 hours, earlier than grilling.
In the meantime, make the yogurt sauce: In a small bowl, mix the yogurt, cucumber, and garlic and stir till effectively combined. Refrigerate till able to serve.
