Orchard Hen Salad Lettuce Wraps

Components

1 lb (454 g) cooked rooster breast or rotisserie rooster, shredded (about 4 cups shredded)
1/2 medium (75g) pink onion, diced
1 medium (200g) apple, diced
1 cup (100g) grapes, quartered
½ cup (60g) slivered almonds
2/3 cup (165g) plain 2% fats Greek yogurt
2 tbsp freshly squeezed lemon juice, or extra to style
1/2 tsp garlic powder
Salt and pepper, to style
6 medium lettuce leaves

Instructions

In a big bowl, mix shredded rooster, pink onion, apple, grapes, almonds, Greek yogurt, lemon juice, garlic powder, salt and pepper. Combine till properly mixed.
